Samples | Feature Recipe
Every 3 to 4 months I like to share a recipe that I feel many people would enjoy eating as well as cooking. You can treat someone special in your life or entertain your friends with an authentic Italian dish that I am sure you will enjoy.

Spaghetti Frittata
PREP: 20 min. COOK: 25 min. SERVINGS: 4 main-course or 8 first-course
Ingredients
8 ounces Spaghetti Noodles

4 eggs

Salt and Pepper to taste

1/4 cup grated Parmesan cheese

2 tablespoons butter

1/4 cup chopped onion

1 cup shredded Mozzarella cheese

2 ounces Prosciutto or cooked and crumbled bacon

3 roma tomatoes

1 tablespoon chopped fresh parsley

Directions
1. Prepare pasta according to package directions.

2. In a medium bowl, beat eggs. Mix in pasta, salt, pepper and Parmesan.

3. In a medium skillet, heat butter over medium heat. Cook onions for 5 minutes or until tender. Remove skillet from heat. Add pasta to the onions and mix. Spread pasta out like a pancake to the edges. Layer shredded mozzarella, prosciutto and tomatoes and cook for 5 minutes or until crispy-brown.

4. Pre-heat oven broiler. Transfer frittata to an oven-safe platter or pizza pan. Sprinkle with additional Parmesan cheese. Place under the broiler for 5 minutes or until the frittata begins to turn golden-brown. Cut into wedges and serve.
